how to prepare raffaello balls
Raffaello balls are a delicious and unique dessert suitable for any occasion. These small white balls are made with a mixture of dried coconut, ground almonds, condensed milk, vanilla paste and salt. They are then shaped into bite-sized balls and a whole almond is pressed into the centre. Raffaello balls are similar in appearance to Ferrero Rocher chocolates, but with a hint of coconut.

1. What are Raffaello balls and why make them?

Raffaello balls are balls with a famous and familiar taste. The combination of coconut and almonds gives them a sweetness that is both refreshing and filling. The addition of vanilla paste enhances the flavour, adding a touch of warmth and depth. As they are not overly sweet, they can delight even the most demanding palates.

Another reason to love Raffaello balls is their texture. The mixture of coconut and ground almonds creates a slightly chewy and crunchy rich texture. The dried coconut adds a slight crunch and flavour, while the ground almonds provide a nutty richness. Condensed milk helps bind the ingredients together and gives the balls a slightly creamy, melt-in-your-mouth texture. For the icing on the cake, we add BAM White Coconut Spread. Just the right combination of almond and coconut paste and creamy milk creates a delicious, creamy white spread that enriches the flavour of the Raffaello balls.

2. How do I prepare the Raffaello balls?

Raffaello balls are easy to make and are suitable for hot summer days. Simply mix all the ingredients in a large bowl: coconut, ground almonds, condensed milk, vanilla paste and salt. Some recipes also call for powdered milk and white coconut spread. Mix everything together and stir until all the ingredients are well combined. Form the mixture into balls. If you like, you can press a whole almond into the centre of the ball, or instead of the almond, you can hide candies or other ingredients you like in the centre of the ball.

Place the balls on a baking tray lined with baking paper and refrigerate for 15 to 20 minutes. If desired, you can also dip the balls in melted white chocolate and refrigerate for a further 5 to 10 minutes to set.

3. Tricks and tips for making Raffaello balls

Making Raffaello balls is a very fun and easy process. It requires no special equipment and the ingredients are available in most grocery stores. The recipe is very flexible, so the quantities of ingredients can easily be adapted to suit your tastes.

Make sure the mixture is chilled. Once the mixture has been formed into balls, they can be chilled in the fridge or freezer for a few minutes before being coated with chocolate. This will help the balls keep their shape and make them easier to handle.

Use good quality white chocolate. If you decide to dip the Raffaella balls in white chocolate, we recommend using good quality chocolate for the best taste and texture.

Add different flavours. You can add different flavours and additives if you wish. For example, you can add a little lemon zest or orange extract for a citrus twist, or stir in chopped dried fruit.
