Break the chocolate into small pieces and melt over a water bath or in the microwave. Mix the egg yolks with the sugar and add the slightly cooled melted chocolate.

Whisk the egg whites and then gently fold the snow into the chocolate mixture. Prepare a baking tray lined with baking paper and pour the mixture into it. Place the baking tray in a preheated oven at 200 degrees for about 10 minutes.

Once the dough has cooled, spread it with sweet cream and roll it into a roll. Break the dark chocolate into small pieces and melt it with the milk and margarine over a water bath or in the microwave.

Pour the melted chocolate over the roulade and serve.
