Put the grated chocolate in a saucepan, add the milk and bring to the heat. Add the cocoa and instant coffee and bring to the boil.

Knead the flour and softened butter and then gradually add them to the boiling chocolate milk. Stir until the mixture is completely smooth, then set aside. Add the egg yolks to the mixture and stir until smooth and creamy.

Whisk the egg whites and sugar until stiff and gently fold into the chocolate mixture. Prepare the moulds and grease them with melted butter. Then fill them with the chocolate mixture.

Fill a deep baking tray with water heated to about 80 degrees and place the filled moulds in it. Place the baking tray in an oven preheated to 170 degrees for about 40 minutes.

Garnish with cocoa powder or whipped cream and serve while still hot.
