This time, the mixer can wait in the cupboard or on the counter, because we won''t need it for the apple cake. We simply shake all the ingredients for the recipe into a bowl and mix them with our hands. First the dry ingredients, then the wet, then the apples and then everything together.

We promise you, it will be absolutely easy to prepare and the result will be a juicy apple cake.

Ingredients:

For the apple cakes:

  • 310 g flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • a pinch of salt
  • a pinch of ground cinnamon
  • 1/2 half teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 240 ml of oil
  • 200 g sugar
  • 200 g sugar

  • 180 g applesauce
  • 4 large eggs
  • 1 teaspoon BAM vanilla paste
  • 30 ml orange juice
  • 360 g peeled apple segments

For the buttercream frosting:

  • 60 g unsalted butter
  • 200 g brown sugar
  • 120 ml sweet cream
  • a pinch of salt
  • 60 g powdered sugar

Instructions:

For the apple cakes:

Preheat the oven to 180°C and grease a 33 x 23 cm baking tray. Prepare the pastry: in a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger and pimento.

In a medium bowl, whisk together the oil, sugar, brown sugar, applesauce, eggs, BAM vanilla paste and orange juice. Pour the wet ingredients into the dry ingredients and stir until combined. Add the chopped apples. Pour the batter evenly into the prepared baking dish. Bake for 45 to 50 minutes. Baking times vary, so pay attention. After about 30 minutes, cover lightly with aluminium foil to prevent over-browning.

Remove the cakes from the oven and place the baking tray on a wire rack. Allow to cool for at least 30 minutes before pouring or serving. Just before serving, you can sprinkle the slightly warm pastry with 15 g confectioners'' sugar or, in the next step, make a brown sugar glaze.

For the butter icing:

When the cake is cooling, make the brown sugar icing. In a medium saucepan over a medium heat, combine the butter, brown sugar, cream and a pinch of salt. Stir continuously until the butter melts, then stop stirring and allow the mixture to come to a rapid boil. Simmer for 1 minute. Reduce the heat, stir briefly and simmer for 1 minute. Remove from the heat and stir in the sifted confectioners'' sugar. Allow the glaze to cool and thicken slightly for at least 20 minutes, then pour over the prepared apple cake.
