Peel the bananas and cut them into discs.
Prepare a tray or small baking tray lined with baking paper.
Spread about half a teaspoon of peanut butter on each banana wheel. Add another banana wheel on top of the peanut butter layer to make mini banana and peanut butter sandwiches. Repeat the process until you have used up all the banana discs.
Place the prepared sandwiches on a tray lined with baking paper and put it in the freezer for about 1 hour to firm up the banana sandwiches.
Meanwhile, melt the chocolate - combine the BAM chocolate drops and coconut oil in a bowl. Heat in the microwave for 1 minute, then stir. Continue heating at 30-second intervals until the chocolate is completely melted.
Once the sandwiches are frozen and the chocolate is melted, take the tray of frozen sandwiches out of the freezer.
Dip each frozen sandwich in melted chocolate so that the whole sandwich is covered in chocolate.
Place the chocolate-covered sandwiches back on the tray with the baking paper. Return them to the freezer to set the chocolate.
Leave the tray of chocolate-covered sandwiches in the freezer for about 15 minutes to allow the chocolate to harden further.
Once the sandwiches are completely set, they are ready to eat. Before eating, leave the frozen sandwiches to stand for about 5 minutes to thaw a little to make them softer.
