Instructions:

To prepare the dough:

In a large bowl, mix the Greek yoghurt, eggs, grated pear, BAM hazelnut spread with cocoa and sweeteners, no added sugar and a little BAM coconut oil until you have a homogeneous mixture. Add the baking powder and oat flour and mix until a smooth dough is formed.

For baking muffins:

Prepare the muffin tins, lightly oil them or line them with baking paper. Divide the batter evenly among the muffin tins. Bake in a preheated oven at 180 °C for 20-25 minutes or until the muffins are firm and golden brown. Cool the muffins on a wire rack.

For the strawberry cream:

In a bowl, whip the cream until soft peaks form. Add the cream cheese and carefully fold in the melted BAM strawberry chocolate until smooth. Place the cream in the fridge for at least 2 hours to chill and set well.

For decoration and serving:

Decorate the cooled cupcakes with strawberry cream, which you pipe in the shape of a brain on top of the cupcakes using a piping bag. Finally, top the cupcakes with BAM strawberry jam without added sugar for an even more authentic strawberry flavour.
