First, bake the sweet potatoes. Preheat the oven to 200°C. Prick the sweet potatoes several times with a fork and bake in the oven for about 45 minutes to 1 hour, until they are completely soft. Allow to cool, then remove the skin and use only the flesh of the potato.

Melt the chocolate over a water bath by placing the chocolate bowl over simmering water and stirring until melted.

In a food processor, blend the two ingredients - sweet potato and melted chocolate until smooth.

Transfer the mixture to a baking tray lined with baking paper and refrigerate overnight.

You can also make a coconut milk-chocolate topping if you like. Add the topping after the cake has set.
