If you''re looking for the perfect chocolate cake to impress your guests, chocolate truffles are the way to go. You don''t need to be a chef to make them - anyone can grate the chocolate, heat the milk and mix the ingredients. They''re also special because you don''t need any special utensils (I''m sure you have them in your kitchen). And even though they''re made withjust 2 ingredients, you won''t be deprived of their rich, creamy flavour. What''s more, they''re just sweet enough and small enough that you can eat more without feeling guilty. They''re handy as a quick snack on the go, and in their neatly wrapped packaging, they make a nice chocolate gift.

Grate the chocolate and shake it in a bowl. The finer the chocolate is grated, the more nicely it will melt later.

Heat the milk in a saucepan until it is very hot (but not boiling).

When the milk is hot, pour it over the grated chocolate and cover the bowl lightly with a lid (if you don''t have one, cover the bowl with a towel) to keep the heat in the bowl. Leave to stand for 5 minutes.

Uncover the bowl and gently stir the ingredients together with a spoon, making sure no air gets in. Stir until the mixture is completely creamy and smooth.

Place the uncovered container in the fridge for about 3 hours, or until the mixture is completely set. You can also test this by sticking a knife in the middle of the container to see if any of the chocolate mixture still sticks to the knife. If it is almost completely clean, the mixture is ready, if not, refrigerate the bowl for a while.

Using an ice cream scoop (if you have one, otherwise use a larger spoon), form the mixture into small balls, then use your hands to gently but firmly shape the balls.

You can spice up the truffles by rolling them in cocoa powder and then placing them on a tray protected with baking paper.
