Ingredients:

  • 115 g unsalted butter, room temperature

  • 100 g sugar
  • 100 g brown sugar
  • 220 g flour
  • 1 egg
  • 2 teaspoons BAM vanilla paste
  • a pinch of salt
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons of BAM spice mix for strudel and pie: https://zacimbe.si/produkt/mesanica-strudelj-a-pita-90g
  • 1 large apple

Instructions:

Preheat the oven to 180°C and line 2 baking trays with baking paper. Remove one of them (you will bake the biscuits on it later) and use the other one to make the pie crust. Roll out the pie crust on the cookie sheet and bake for 15 minutes or until golden brown and fully baked. Break into small pieces and set aside. Place the paddle attachment in a stand mixer, beat the butter and sugar together until the mixture is light and airy, about 2 minutes.

Scrape down the sides of the bowl with a rubber spatula and add the egg and BAM vanilla paste. Beat until the mixture is smooth and fluffy, about 2 minutes. Add the flour, baking powder, baking soda, spices and salt. Mix at low speed, gradually increasing to high. Mix until no traces of flour remain. With a rubber spatula, add the apple pieces and the pie crust pieces, mixing a few times to make sure they are evenly distributed.

Use a cookie scoop or just use an ice-cream scoop to scoop the dough onto the prepared baking tray. Bake the biscuits for 12 to 15 minutes or until the edges are set and the centre is still soft. Allow the biscuits to cool completely before serving.
