Ingredients:

  • 65 g brown sugar
  • 15 g sugar
  • 1 teaspoon cinnamon
  • 60 g unsalted butter
  • 85 g flour
  • 220 g flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 115 g unsalted butter
  • 100 g brown sugar
  • 50 g sugar
  • 2 eggs
  • 120 g yoghurt or sour cream at room temperature
  • 2 teaspoons BAM vanilla paste
  • 60 ml of milk
  • 165 g sliced apples

Instructions:

Preheat the oven to 220°C. Spray a 12-cup muffin tin with non-stick spray or line with paper cases. Cinnamon crumb: In a medium bowl, mix together the brown sugar, sugar and cinnamon. Stir in the melted butter, then gently stir in the flour with a fork. The mixture should be in the form of large crumbs. If you over-mix it, it will turn into a thick paste.

In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon and salt. Beat the butter and both sugars until the mixture is smooth and creamy, about 2 minutes. Add the eggs, yoghurt and BAM vanilla paste. Beat at medium speed for 1 minute, then continue beating at high speed until the mixture is combined and mostly creamy. (It''s okay if it looks a little curdled.) With the mixer on low speed, add the dry ingredients and milk to the wet ingredients. Add the apples.

Spread the mixture evenly into the magnum moulds, filling each one to the top. Spoon the crumb topping on top of each one and press down gently to adhere. Bake at 220°C for 5 minutes, then leave the muffins in the oven and reduce the oven temperature to 180°C. Bake for a further 15 to 18 minutes. The total baking time for these muffins in the oven is approximately 20 to 23 minutes. Allow the muffins to cool for 5 minutes in the muffin tray, then transfer them to a wire rack to continue cooling.

Mix all the ingredients for the glaze and drizzle over the warm or cooled muffins.
