Ingredients:

  • 200 g flour
  • 100 g almond kernels
  • 100 g chocolate powder
  • 100 g sugar
  • 150 g butter
  • 2 egg yolks
  • 2 tablespoons almond liqueur
  • vanilla paste
  • pinch of salt
  • hazelnuts

Instructions:

Finely grind the unshelled almonds and grate the chocolate. In a separate bowl, whisk together the sugar, vanilla sugar and softened butter.

Mix well and then add the chocolate powder, flour, egg yolks, liqueur, a pinch of salt and ground almonds.

Knead the ingredients into a dough, roll out into a 2 cm diameter roll and place in the fridge for an hour and a half.

When the dough is chilled, cut the rolls into pieces about a centimetre thick. Shape into croissants and place on a baking tray lined with baking paper.

Bake them in a preheated oven at 175 degrees for about 10 - 13 minutes. Leave the croissants to cool.

While waiting for them to cool, prepare the chocolate topping. Melt the chocolate with the milk and sugar over a water bath and pour the crushed hazelnuts into a small bowl.

Dip the ends of the cooled croissants first in the melted chocolate and then in the bowl with the hazelnuts.

Place the croissants on baking paper and allow the chocolate to set. The croissants are then ready to serve.
