Ingredients:

  • 135 g flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • 2 tablespoons sugar
  • 130 ml of milk
  • 1 large egg
  • 2 tablespoons butter

Instructions:

Sift the flour, baking powder, salt and sugar into a large bowl. In a separate bowl or jug, lightly whisk together the milk and egg, then stir in the melted butter.

Pour the milk mixture into the flour mixture and whisk with a fork until smooth. Any lumps will soon disappear with a little stirring. Leave the dough to stand for a few minutes.

Heat a frying pan with non-stick oil over a medium heat and add a knob of butter. Once melted, add a ladle of batter (or two if your pan is big enough to cook two pancakes at the same time). It will seem very thick, but that''s the way it should be.

Wait until bubbles start to form on the top of the pancake, then flip and cook until both sides are golden brown and the pancake has risen to about 1 cm to 1,5 cm thick.

Repeat until all the dough is used. Serve with a drizzle of real maple syrup and extra butter. BAM spreads or chocolate topping can also be added.
