But to make American banana pancakes really fluffy, here are a few BAM tips. Don''t over-mix the batter for American pancakes . Once you''ve mixed the recipe ingredients, the mixing is done. If there are a few lumps left in the batter, don''t worry. It will make the American pancakes even tastier.


Let the batter rest for a bit after mixing. This is not a strict rule, but if you are really in a hurry, you can skip this part. Ingredients:

  • 180 g flour
  • 25 g sugar
  • 2 1/2 teaspoons baking powder
  • a pinch of cinnamon
  • pinch of salt
  • 2 medium-sized ripe bananas
  • 240 ml of milk
  • 2 large eggs
  • 60 ml of oil
  • BAM nutty banana spread

Instructions:

In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, cinnamon and salt. Set aside. In a separate bowl, mash the bananas with a fork (it''s okay if small pieces remain). Add the eggs, milk and oil and stir until the ingredients are combined. Pour the dry ingredients into the wet ingredients and stir just until combined (don''t over-mix). Let stand for a few minutes.

Heat a large frying pan over a medium heat. Cook until bubbles form on the surface of the pancakes, then turn them with a thin spatula and cook for another minute or two. Serve warm. Top with maple syrup or BAM nutty banana spread, if desired .
