In a large bowl, combine the yoghurt, eggs, sugar, BAM vanilla paste, lemon zest or orange zest. Add the flour, baking powder and salt and stir with a whisk until the mixture is smooth and thick.

Heat the oil in a large pan. Using a small spoon, scoop out the batter and add it to the hot oil. When the batter turns golden brown in the hot oil, the yoghurt mice are ready. Line a plate with paper towels and place the yoghurt mice on it. Allow the paper towels to soak up any excess oil. Sprinkle with icing sugar and serve.
