  • 120 g powdered sugar
  • 1 tablespoon lemon juice
  • Grated peel of 1 organic lemon
  • ½ tablespoon BAM vanilla paste
  • Pinch of salt

For decoration:

  • Fresh mint leaves (optional, as a lemon detail)

The BAM macaron mix makes them easy to prepare and the lemon cream adds a special fresh finish. They are at their best the next day, when the flavours have melded and the texture has fully set. ? Ingredients 1. For the macarons: 1 packet BAM macaron mix 50 ml water (room temperature) A little yellow food coloring (optional) 2. For the lemon cream: 60 g butter (room temperature) 60 g cream cheese (room temperature) 120 g powdered sugar 1 tbsp lemon juice Zest of 1 organic lemon ½ tbsp BAM vanilla paste A pinch of salt 3. For decoration: Fresh mint leaves (optional, as a lemon detail) ?‍? Instructions 1. Prepare the macaron mixture: In a bowl, mix the BAM macaron mix with water and add a few drops of yellow food coloring. Beat with an electric mixer for 5 minutes, until you get a smooth, glossy mixture. 2. Shape the macarons: Transfer the mixture into a piping bag and pipe even rounds of about 10 g each onto a baking tray lined with parchment paper. Let them rest for 15–20 minutes, until a thin crust forms on the surface. 3. Bake: Bake the macarons in a preheated oven at 150 °C (fan or top + bottom heat) for 15–18 minutes. Once baked, let them cool completely, then carefully remove from the parchment. 4. Prepare the lemon cream: In another bowl, mix butter, cream cheese, powdered sugar, lemon juice, zest, vanilla paste, and a pinch of salt. Beat until smooth and airy. 5. Assemble the macarons: Pipe lemon cream onto half of the macarons. Optionally, add a small mint leaf as a “lemon detail,” then cover with the other half. 6. Chill and serve: Place the macarons in the fridge overnight so the cream sets and the flavors blend. Prepare the macaroni mixture:

In a bowl, mix the BAM mix with water and add a few drops of yellow colouring.

Beat with an electric mixer for 5 minutes until you have a smooth, shiny mixture.

Design macroons:

Transfer the mixture into a piping bag and pipe even mounds of about 10 g onto a baking tray lined with baking paper.

Leave them to rest for 15-20 minutes to form a thin crust on the surface.

Bake:

Bake the macarons in a preheated oven at 150 °C (vented or lower + upper heating) for 15-18 minutes.

Once baked, cool completely and then carefully remove from the paper.

Prepare the lemon cream:

In another bowl, mix together the butter, cream cheese, icing sugar, lemon juice, zest, vanilla paste and a pinch of salt.

Whisk until you have a smooth and airy cream.

Macrone compositions:

Spread lemon cream on half of the macaroons.

If desired, add a small fresh mint leaf as a "lemon detail", then cover with the other half.

Chill and serve:

Place the macarons in the fridge overnight to allow the cream to set and the flavours to combine. They are best the next day!
