In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk together the eggs, melted butter, BAM vanilla paste and buttermilk. Add the wet ingredients to the dry ingredients and stir just long enough to combine. The dough should be lumpy. Finally, add the BAM dark chocolate.

Heat a large frying pan over medium heat. When hot, grease the pan generously with oil or butter (about 1 tablespoon per 3 pancakes). Pour the pancake batter on the surface. Fry on one side until holes form around the edges, about 2 minutes, then turn and fry on the other side for another 1-2 minutes. The pan should not get too hot - you want a nice, even heat. Serve with butter and a healthy dose of maple syrup! The possibilities are endless!
