One of Germany''s favourite desserts, Zwetschgenkuchen is also very popular in neighbouring Austria and Switzerland. The plum pie originates from the Swabian town of Augsburg and is considered an authentic Bavarian culinary speciality. It is also served during Oktoberfest.

The plum pie is studded with fresh plums and as such is light, juicy and will be the perfect accompaniment to strong coffee, dessert wines or certain German beers. It is considered by many to be a summer dessert, as the plum season runs from May to October.

Ingredients to make plum pie:

  • Plums. For best results, use fresh, ripe fruit.
  • Eggs. Avoid using very large eggs in this recipe.
  • Sugar. We will use brown sugar in this recipe as it adds a depth of sweetness to the dough. It also gives it a darker colour.
  • Butter. If your plums are not very juicy, you can replace half of the butter required with olive oil and the pie will have an even more moist texture.
  • Vanilla. Vanilla will infuse the dough with flavour.
  • Cinnamon. For its warming, fragrant spicy aroma. You can substitute or add nutmeg if you wish.
  • Baking soda to help the dough rise.
  • Salt.

Plum pie also goes well with apple pie or fried apple rings.

Ingredients:

For the plum pie:

  • 300 g plums
  • 140 g melted butter
  • 150 g brown sugar
  • 1 teaspoon BAM vanilla paste
  • 1/2 teaspoon cinnamon
  • 5 eggs
  • 240 g flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt Powdered sugar (to sprinkle on the pie if necessary)

Instructions:

For the plum pie:

Preheat the oven to 180°C. Grease a 25 cm diameter pie tin. Wash and halve the plums, remove the pits and cut into rounds. Whisk the melted butter, sugar, BAM vanilla paste and cinnamon in a foamy bowl until the mixture is creamy. Gradually add the eggs, whisking constantly, until the mixture is airy.

Sift the flour, mix it with the baking soda and salt and gradually incorporate it into the mixture by hand, using a spatula or wooden spoon. Pour the batter into the pie pan. Smooth with a spatula or the back of a spoon and arrange the plum slices over the top in a concentric pattern, starting in the centre and moving towards the perimeter.

Bake for 50 minutes. Remove the pie from the oven and leave to cool for a few minutes before removing from the baking tray. Sprinkle the plum pie with icing sugar (if desired).
