Ingredients for the sponge cake:

  • 400 g pickled sour cherries
  • 2 tablespoons breadcrumbs
  • 100 g chocolate powder
  • 5 eggs
  • 150 g sugar
  • 150 g butter
  • 200 g ground walnuts

Instructions:

Separate the yolks from the whites. Beat the egg whites until stiff and gradually add the sugar (50 g). Beat in the butter and the remaining sugar.

Then fold the egg yolks into the butter mixture, one by one. Gently fold in the walnuts, chocolate powder and egg white whites.

Then prepare a baking tray lined with baking paper and pour the mixture into it, spreading the sour cherries evenly over the mixture. Place the baking tray in an oven preheated to 180 degrees for about 50 minutes.

In the meantime, prepare the topping for the perfect finishing touch - break the chocolate into small pieces and melt it with the butter over a water bath.

Pour the melted chocolate over the cake and decorate with candied cherries or sprinkle with icing sugar, if desired.
