Whip the cream to stiff peaks, then gradually fold in the BAM ice cream mix and half of the pistachio spread. 2. Place the prepared cream in the freezer for at least 1 hour. 3. Meanwhile, mix together the sticky rice flour, sugar and milk. Add water if necessary to get a yoghurt-like consistency. Colour the dough with green food colouring. 4. Cover the dough with food foil, pierce it and cook in the microwave for 3 minutes. If necessary, extend the cooking time at 30 second intervals. 5. Add the butter to the hot dough, knead well and leave to cool for at least half an hour. 6. Divide the cooled dough into 8 pieces, roll each piece into a circle. 7. Place a spoonful of ice cream in the centre of each circle. 8. Carefully close the edges of the dough to form the mochi. 9. Place the mochis back in the freezer for at least 20 minutes. 10.
