Brownies are a popular dessert whose main ingredient is chocolate. But brownies can be made in other ways too, and one of the recipes is one without chocolate. Making brownies without chocolate may sound like a bit of an unusual decision, but it can be influenced by many factors such as health or other restrictions. What about sugar? This can also be substituted. In recipes, sugar can be replaced by other types of sweeteners and flavourings. Maple syrup or honey can be used in some recipes, with cinnamon or nutmeg for extra flavour.

1. How to make brownies without chocolate?

Use cocoa powder. If you want to achieve a chocolate flavour and do not want to use real chocolate, use cocoa powder. Cocoa powder is made from chocolate but does not contain cocoa butter, the ingredient that gives chocolate its creamy texture. In the recipe, replace the chocolate with cocoa powder and adjust the other ingredients as necessary.

Add other flavours. Other flavours besides chocolate work well in brownies. You can add chopped nuts, dried fruit or spices such as cinnamon or cardamom to the batter to give them a unique flavour.

Take care not to over-bake the dough. As the recipe does not include chocolate to indicate when the brownies are baked, baking can be a little more difficult than with regular chocolate brownies.   • 55 g unsalted butter
  • 400 g brown sugar
  • 2 large eggs
  • 2 teaspoons BAM vanilla paste
  • 250 g flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 100 g chopped nuts

Instructions:

For brownies without chocolate:

Preheat the oven to 180°C and line a 33 x 23 cm baking tray with baking paper. In a large bowl, whisk together the melted butter and brown sugar until well combined. Add the eggs and BAM vanilla paste and whisk until the mixture is smooth.

In a separate bowl, mix together the flour, baking powder and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined. Add the chopped walnuts.

Pour the batter into the prepared baking tray and bake for 25 to 30 minutes. Allow the brownies to cool in the tray for a while before slicing and serving.
