In a saucepan, bring the cream and the vanilla pod, cut lengthwise and broken in half, to the boil. Remove from the heat and leave to stand for about 10 minutes.

Melt the three types of chocolate separately in the microwave or in a water bath. Separate the yolks from the whites and add 2 egg yolks to each type of melted chocolate.

Mix in the sugar and a pinch of salt and add a third of the mixture to each of the chocolate mixtures. Stir until the sugar is dissolved.

Separately place the chocolate creams in a water bath and stir until thickened. Then layer the chocolate creams in jars and place them in the fridge for a few hours to set.
