Say hello to your new favourite chocolate buttercream. This simple chocolate buttercream will be silky, rich, super chocolatey and the perfect complement to all your favourite cakes and cupcakes.

What do you need to make chocolate buttercream?

  • Butter: We recommend using unsalted butter as this helps to control the amount of salt in the cream. As with all butter creams, it is very important to use good quality butter.
  • Cocoa powder: Forthis chocolate buttercream you will need a full cup of cocoa powder, so make sure you have enough! A good Dutch-processed or dark cocoa powder will be perfect.
  • Powderedsugar: Powdered sugar is the base for most homemade custards. Powdered sugar sweetens and hardens your icing. If you want to thicken this buttercream for decorating or to create harder shapes - simply add more sugar.
  • Milk or coffee: You will only need a little liquid to thin the cream a little to make it nice and creamy. If you use coffee, the chocolate flavour is enhanced.
  • Espresso powder: Like coffee, espresso powder will help to deepen the flavour of the chocolate.
  • Salt: A pinch of salt will help reduce any over-sweetness and round out the flavour profile.
  • Vanilla: does it even need an explanation? :)

Place the room temperature butter in a stand mixer fitted with the whisk attachment. Scrape the bowl and add the BAM cocoa powder. Beat on low speed and gradually increase to high speed.

Scrape the bowl and start by adding the icing sugar, BAM vanilla paste, espresso powder and 3 tablespoons of milk. Whisk on low speed and gradually increase to high speed and whisk until light and fluffy. If the icing seems too stiff, add more milk. Gradually, one tablespoon at a time. If it seems too runny, add 1 tablespoon of icing sugar at a time until the cream reaches the desired thickness.

Transfer the cream to a piping bag and decorate the next dessert with it.
