Brownies with sour cherries are a decadent and totally irresistible dessert! That''s the best way to describe these brownies with sour cherries. Brownies are basically chocolate biscuits with a thin, crackly top, a soft centre and crispy chewy edges. The sweet and juicy cherry pieces add to the succulence , do we need anything more?

Brownies are quick and easy to prepare and ideal for baking for any occasion. Sour cherries can be used fresh, canned or frozen in this recipe. Cocoa powder: try using unsweetened, Dutch-processed cocoa powder.

Dutch processed cocoa is much less bitter than natural cocoa powder because it has been treated with alkaline substances to reduce the acidity of the cocoa. It is also usually darker in appearance and produces a darker dough.

Brownies should be chilled before serving. Wait at least an hour, but it is best to let them cool completely. The longer you wait before cutting, the better. Chilled ones will cut nicely, while warm ones will not be able to be cut into nice shapes.

Preheat the oven to 175°C. Butter the base and sides of a 20 cm square baking tray and line with baking paper. In a medium saucepan, combine the butter and 100g sugar and heat over a medium heat, stirring slowly until the sugar has melted and the butter is completely melted, about 1-2 minutes. Remove and leave to cool slightly.

In a large bowl, whisk the eggs and the remaining 200 g of sugar until light, smooth and fluffy, about 5 minutes. Pour the sugar-butter mixture into the sugar-egg mixture and stir. In a medium bowl, whisk together the flour, BAM cocoa powder, baking powder and salt. Add the dry ingredients to the bowl with the sugar, egg and butter and mix. Don''t over-mix, a few remaining streaks of flour is just fine.

Add the chocolate and sour cherries and fold them in with a spatula to combine evenly. Pour the batter into the prepared baking dish and smooth the top with a spatula. You can also reserve a small handful of chocolate and sprinkle it over the top of the biscuit dough. Bake the brownies for 35 to 40 minutes, or until the top of the brownies are set and shiny, with a few cracks on the surface.

Leave the brownies to cool. Lift the brownies out of the baking tray with baking paper, cut into 16 square pieces and enjoy!
