These creamy lemon lights are made with only FOUR ingredients and will become our new most refreshing and healthy treat. These creamy lemon lights are made with yoghurt, lemons, almond milk and honey (or agave). Although there are only four ingredients, we have to make sure we choose the right ones.

Don''t hesitate too long when choosing yoghurt. The best choice is non-fat Greek yoghurt, but any other type of yoghurt will do. If you choose a flavoured yoghurt, choose one that goes well with the lemon flavour. Now for the main ingredient, the lemons.

We will use the juice and zest of the lemon for the flavouring of the ice cream lights. If we had to choose the most refreshing flavour of summer, it would definitely be lemon. That''s why we are making creamy lemon ice cream lanterns. But let''s not forget, lemons are delicious all year round, so these creamy lemon lights can be enjoyed in winter too. The choice of honey is obvious.

Mix all the ingredients. Stir in the sprinkles carefully as they may slightly discolour the colour. The mixture will be thick. If you want sweeter cream lights, you can add a little more honey. If you want more lemon, add more juice or zest.

Pour the mixture evenly into each ice cream mould. If the ice-cream mould has slots for the popsicle sticks, you can insert them before freezing - if not, freeze for 2 hours, then place a wooden popsicle stick in the centre. Continue freezing for a further 3-4 hours or overnight.
