Melt the chocolate using a water bath. Mix together the flour, cocoa powder, espresso powder, baking powder and salt.

In a large bowl, using a hand or stand mixer fitted with the paddle attachment, beat the butter, brown sugar and sugar together. Beat on medium to high speed until the mixture is smooth and creamy, about 2 minutes. Add the eggs and BAM vanilla paste and beat on high speed for 2 minutes. Pour in the slightly cooled melted chocolate and beat on medium to high speed for 2 minutes. Add the dry ingredients and beat on low speed until combined.

Preheat the oven to 180°C. Line large baking trays with baking paper. Cover the dough and chill in the fridge for 20 minutes, then roll out or scoop the dough into balls, 1,5 tablespoons of dough each. Place the balls 3 cm apart on the baking trays and bake for 12-13 minutes or until the edges appear set.

Remove from the oven and allow the biscuits to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
